Now that I’m home with the little one all day, I have started to really search for lunches that both of us will enjoy. Lunch is key. It has to be something handheld with lots of cheese for him, and something that will leave me with calories left for the rest of the day.
When meal planning for the week, I found this recipe on Fitness Magazine. Think grilled cheese with turkey breast and tomato. Absolutely delicious and quick. Oh, and speaking from personal experience, if given the choice of two halves of a grilled cheese, the little one will ALWAYS take the bigger half for themselves.
2 slices whole-grain bread
1 slice cheddar cheese
2 ounces sliced turkey
1 slice tomato
Make sandwich with bread, cheese, turkey and tomato.
Coat a skillet with cooking spray and toast sandwich for about 3 minutes on each side, until bread is golden brown and cheese is melted.
