Hello, beautiful deliciousness, how are you? This beauty of a number is actually a present. Today is my sister’s six month anniversary with Jon. They are a cute couple.
When I found this recipe when searching for a trail mix, I called Maria right away. Being a ranger, Jon rarely is on leave and much of their relationship has been long distance. I am so very glad that my sister is happy. She loves to send him care packages. I love to help her cook. We arranged a time to get into the kitchen to make this snack, asap.
In a bowl, we combined 3 cups of roasted peanuts, 4 slices of dried pineapple, 1 tablespoon of honey and soy sauce respectively.
I knew that I had Maria when I told her about the bacon. We baked 8 slices of bacon in the oven and sliced them into the trail mix. From here, it goes into a 350 degree oven for 20 minutes. The bacon will continue to crisp and the peanut and pineapple continue to soak up the soy, honey, and bacon.
Here is the finished product, packed up and ready to go. A certain three year old might have insisted that a dolphin be eating the trail mix in the picture.
8 thick slices of meaty bacon
3 cups salted roasted peanuts
4 candied pineapple rings, cut into 1/3-inch triangles
1 tablespoon low-sodium soy sauce
1 tablespoon honey
1/4 teaspoon cayenne pepper
Preheat the oven to 350°. Arrange the bacon in a single layer on a rack set over a large rimmed baking sheet. Bake for 30 minutes, until the bacon is crisp. Drain on paper towels and cut into 1/2-inch strips.
In a bowl, toss the bacon with the peanuts, pineapple, soy sauce, honey and cayenne. Spread on a rimmed baking sheet and bake for 20 minutes, stirring once, until the bacon is browned. Season the mix with salt and stir occasionally until cool, then serve.
